Hello, Toronto. By now you must have heard that thanks to your incredible generosity and hard work, Toronto Bakes for Japan has raised $28,409 for the Japanese Red Cross Society! We could not be more grateful. We know how awesome you are, and that is why we are sure that you can help us hit $30K.

I started this initiative because I bake a LOT and thought that was a good idea to raise money and get the whole community involved. Ironically, the event got so big that I didn’t have the time to bake anything. As Niya and I try to raise the last $1591, I’m throwing my hat (and apron) into the ring. You can now bid on some delicious treats from my kitchen. All proceeds will be added to the total amount raised for the Japanese Red Cross Society. Please enter your bids in the Comments section by indicating the amount and the baked goodie you would like to bid on. Minimum bid amounts are indicated next to the item and each successive bid should be at least $5 higher than the previous one. Bidding ends on Sat, Apr 16 extended to Wed, Apr 20.

If there are any specific requests for the bake auction, I’m all ears. Just let me know via the Comments section and I’ll add it to the list.

1. Audrey Hepburn Cupcakes
12 Dark Chocolate Cupcakes with Chocolate Ganache & Almond-Cream Cheese Frosting
Minimum Bid – $25
Not only are these cupcakes a joy to eat, they manage to cross over from the usual confines of cute, and are chic and elegant enough to serve at a dinner party. They look fabulous all lined on a tray, as if they are ready and dressed to go to some fancy party, which is what inspired me to nickname them. I’m sure Hepburn would have approved.

2. Spring Cupcakes
12 Lemon/Vanilla Cupcakes with Cream Cheese Frosting
Minimum Bid – $25
Hello, Cupcake is one of the most inventive and inspired cake decorating books out there. Spring is here, and how better to celebrate it than with these beautiful daisy and butterfly cupcakes. I don’t have a picture of these yet, but you can check out the Pumpkin-Spice and Chocolate-Owl cupcakes I’ve made before. With cupcakes this adorable, how can you lose?

3. Chocolate and Salted Caramel Tart
Minimum Bid – $20
A tart so dark and luscious, it will satisfy all your deepest chocolate cravings. Cut through and the golden salted-caramel layer will be revealed. Honestly, how can you resist?

4. Amaretto Pear Tart
Minimum Bid – $20
A flaky and buttery crust, juicy pears snuggled up in a blanket of almond and cinnamon cream, the fragrance of warm fruit and Amaretto mingling together – this is the French Pear Tart of your dreams.

5. Marie-Helene’s Apple Cake
Minimum Bid – $20
This apple cake adapted from Marie-Helene in Dorie Greenspan’s Around my French Table is less cake and more an excuse to hold in buttery suspension the many, many apple chunks that go into the batter. Needless to say, it’s a very moist cake and, as I’ve discovered, only improves with age. A perfect ending to any meal.

6. Glorious Gluten-Free Torte
Minimum Bid – $20
This torte begins with a cake that contains only four ingredients – nuts (walnuts/pecans), eggs, sugar and spices. It’s light and delicate, laced with warm spices and a nutty taste that’s perfect on its own with a cup of coffee. To make it more festive, I top it with a layer of salted pumpkin-caramel sauce. (Yes, I did just say salted, pumpkin and caramel in the same sentence; are you in dessert heaven yet?) A thin layer of lightly spiced, roasted apples and pears cuts through the sweetness and adds another layer of texture. Topped with barely sweetened whipped cream and pecans, it is one of my proudest desserts. If you’re gluten-free, you’ll love this cake. If you’re not gluten-free, you’ll love this cake. It’s a win-win, and with dessert, that’s a good place to be.

7. White Chocolate, Macadamia and Cranberry Cookies
2 dozen cookies. Minimum Bid – $20
Do you have room for a giant cookie – one that’s crisp on the outside, chewy on the inside, studded with white chocolate chips, cranberries and roasted macadamia nuts, and that exudes an aroma of browned butter when unwrapped; a cookie that’s the pinnacle of cookie perfection? Yes? I thought so.

8. Chocolate-Espresso Shortbread Cookies
2 dozen cookies. Minimum Bid – $20
Let me say that again, slowly. Chocolate. Espresso. Shortbread. Cookies. Are you drooling yet? And if you’re not, where do you come from? Don’t be fooled by their simple innocence; these cookies need to come with a disclaimer because they are HIGHLY addictive. If you can stop eating at just one, I ask you again, who are you? And where can I buy some of that will power? Because mine just crumbles in the face of that heavenly butter-sugar-espresso-chocolate combination.

9. Homemade Pepper Jam Pop Tarts
1 dozen pop tarts. Minimum Bid – $20
My homemade version bears little resemblance to the original. It is made with my favorite pastry dough and filled with a smoky-spicy-sweet roasted red pepper chutney leading to a savory Red Pepper Jam Pop Tart. They are then sprinkled with a little bit of cheese, covered with a top layer of pastry, a light egg wash and a sprinkle of poppy seeds. Half an hour in the oven and the pop tarts are golden and just begging to be eaten. They lack the sturdiness of the store-bought ones, but who needs heft when you can have flaky?

10. Chocolate-Ginger Sugar Topped Cookies
2 dozen cookies. Minimum Bid – $20
This cookie is spiced with three types of ginger – fresh, powdered and candied, which gives it a nice kick unlike the sugary-sweet versions found in most stores and cafes. The cocoa serves as a nice counterpart to the spice but make no mistake, ginger is the star here. The sugar gives the cookies a nice crunchy exterior while the molasses lend their hand towards a wonderfully chewy interior. They may look simple lined up against delicate butter cookies, laden chocolate chip and pretty macarons, but they are addictive little devils.
